Homemade Unsweetened Applesauce: A Simple Recipe

Applesauce is a versatile ingredient that can be used to replace xanthan gum in gluten-free baking, providing moisture and a bit of binding power without adding any unusual ingredients.
Here’s a simple recipe to make your unsweetened applesauce at home.
Ingredients:
4 large apples (any variety, but Granny Smith or Cox’s apples work well)
1 cup (240ml) water
1 tablespoon (15ml) lemon juice
1 teaspoon (5 g) ground cinnamon (optional, for added flavour)

Instructions:

  1. Prepare the Apples
    Peel, core, and chop the apples into small chunks.
  2. Cook the Apples
    In a large saucepan, combine the apple chunks, water, and lemon juice. If you are using cinnamon, add it now. Bring the mixture to a boil over medium-high heat.
  3. Simmer:
    Once boiling, reduce the heat to medium-low and let the apples simmer, covered, for about 15-20 minutes, or until they are soft and easy to mash. Stir occasionally to prevent sticking.
  4. Mash the apples.
    Once the apples are soft, remove the saucepan from the heat. Use a potato masher or an immersion blender to puree the apples to your desired consistency. For a smoother applesauce, blend longer.
  5. Cool and Store
    Let the applesauce cool to room temperature. Store in an airtight container in the refrigerator for up to a week, or freeze in portions for longer storage.

Apple Varieties

Mixing different types of apples can give a more complex flavour to your applesauce. Sweet varieties like Gala or Honeycrisp mixed with tart ones like Granny Smith create a balanced taste.
Adjust Consistency, If you prefer a thicker applesauce, use less water. For a thinner consistency, add a bit more water during cooking.

For flavour variations, feel free to experiment with additional spices, like nutmeg or a splash of vanilla extract, for a unique twist.
